Serving Temperature Risk

Serving Temperature Risk is the liability exposure created by serving food at a temperature that lets bacteria grow, or that can cause a burn. Food safety rules require hot food to stay above 60 degrees Celsius, and cold food to stay below 5 degrees. Serving food outside this range, or serving a very hot drink that burns a customer, can lead to a claim and to a regulatory fine.
